Red and White event
As August 17, that is the Indonesian Independence day is approaching, I need to write this post quickly and publish it right away. My friend, Dwiana, asked me to join this event, a collaboration with two other Indonesian food bloggers, which is called Red and White (click this link to see the rules).
Some (or all) of you might know that I was born in Jakarta, Indonesia, 30-something years ago. I had a relatively happy and secure childhood life growing up in Jakarta. For most part, it was filled with outdoor activities for I was quite a tomboy. Chasing runaway kites, playing with marbles, playing with my cousins-2 were boys, 1 was a girl-and my brother would fill my most afternoons. Foods were plentyful, tropical fruits were abundant, traditional sweet snacks were easy to find and buy. I do miss all of those wonderful years of my down-to-earth upbringing. Like everybody else who is transplanted to another country, that feeling is mutual.
As I’m now a US citizen, I don’t necessarily celebrate Indonesian Independece day anymore. But in the spirit of being born as Indonesian, still cook Indonesian foods and still crave Indonesian snacks, I said yes to her. My entry is not a traditional food of Indonesian, though it’ll be nice to do that. I was looking for something super easy, especially when we have hot summer days in Oregon right now, particularly something that need not be baked for a long time. I found my calling here, with this recipe, the White Chocolate and Raspberry Pie. The summer is ending very soon enough, I thought of using berries hopefully for the last time. As soon as I wrote that I know I would regret it!
White Chocolate and Raspberry Pie
Makes one 9-inch pie; 6 to 8 servings
2 tablespoons cold water
1 envelope unflavored gelatin
10 1/2 ounces white chocolate
1 1/2 cups heavy cream, chilled
2 tablespoons fresh lemon juice
1 teaspoon grated lemon zest
1 prepared crumb crust
1 pint fresh raspberries
Place the cold water in a small stainless-steel bowl and sprinkle the gelatin on top. Let the gelatin stand to dissolve.
Put 2 inches of water in a medium-size saucepan and bring the pot to a bare simmer. Combine the chocolate and 1/2 cup of the heavy cream in a stainless-steel bowl big enough to rest on top of the saucepan. Place the bowl over the simmering water, making sure that the bottom of the bowl doesn’t touch the water. Heat, whisking occasionally, until the chocolate is completely melted and the mixture is smooth.
Whisk the gelatin mixture, lemon juice, and lemon zest into the bowl of melted chocolate. Set that bowl over a larger bowl of ice cubes and let it stand, whisking occasionally, until the mixture begins to thicken, about 10 minutes.
In a medium-size mixing bowl using an electric mixer, whip the remaining 1 cup heavy cream until soft peaks form. Gently fold the whipped cream into the chocolate mixture.
Scrape the filling into the prepared pie shell. Cover the pie with plastic wrap and refrigerate it until the filling is completely set, at least 6 hours and up to 1 day.
Just before serving, arrange the raspberries on top of the pie.
Graham Cracker and Nut Crust
Makes one 9-inch pie crust
11 whole graham crackers (to yield about 1 1/3 cups crumbs)
1/2 cup walnuts
1/4 cup (1/2 stick) unsalted butter, melted and slightly cooled
1/2 tablespoon sugar
1/8 teaspoon salt
Preheat the oven to 350 degrees F.
Place the graham crackers and nuts in the food processor and process them until they are finely ground. Combine the crum-and-nut mixture, butter, sugar, and salt in a medium-size mixing bowl and stir until the crum-and-nut mixture is moistened.
Press the mixture evenly across the bottom of a 9-inch pie plate and all the way up the sides of the pan, packing it tightly with your fingertips so it is even and compacted.
Bake the crust until it is crisp, 6 to 8 minutes. Let it cool completely before filling it.

Your pictures look so pretty! That pie sounds delicious. Raspberries go so well with cream and chocolate. Yum!
i love eating berries with chocolate, be it white or dark, so yeah, this was good for me
